Aimsir celebrates what can be sown and harvested, fished and foraged on the island of Ireland and is inspired by the Irish landscape and climate. The brand represents elements of both the Irish climate and habitat and features a journal of the team as they source and forage for ingredients.
The key restaurant focus is the central island pass where the team add their finishing touches, bringing the kitchen experience to the centre of the restaurant. We designed the bespoke furniture which we had handcrafted in Ireland to match the restaurant ethos.
